RECIPE ELEVEN: ROASTED CHICKPEAS (˶ˆᗜˆ˶)
Warning: This one is spicy! You can adjust the spice to your taste, I don’t find it to be spicy the way I make it but I have a spice tolerance. If you want an easier version, just get Trader Joe’s spicy garlic sesame sauce instant noodles and make those they’re SO GOOD and this recipe is just a replication of them.
Note: Instant noodles really aren’t great for blood sugar, HOWEVER! I’m including this on the list as an example of a way to make something you like while also making sure you don’t spike your blood sugar (aka: adding protein, veggies, and acid into the mix)
Ingredients:
- Veggie broth, chicken broth, or any other broth
- Instant noodles (I have a very specific pack of trader joes soy and sesame sauce instant noodles)
- 1 tablespoon tahini (optional but it thickens the sauce and tastes good, can also use 2 teaspoons flour)
- 1 tablespoon sriracha (adjust to spice level. I find that this amount with the honey added doesn’t end up being that spicy at all but it's up to you.)
- 1 teaspoon honey
- Instant noodle spice packet
- Instant noodle sauce packet OR 1 tablespoon of oil
- ¼ as teaspoon garlic power
- 1-2 tablespoon soy sauce
- Cooked boneless chicken (not seasoned with anything crazy)
- Kimchi
- Chili crisp (optional)
Directions:
- Take the smallest pot you have and fill a little more than ⅓ of the way with broth of your choice. Turn the heat on high until simmering and then turn onto low. Optionally add a lid for faster boiling but it isn’t necessary.
- While the broth is boiling, get a small bowl.
- Once the broth has gotten warm, put the tahini or flour in the bowl and add a tiny bit of broth to it with a spoon. Mix well. Keep adding a tiny bit of water and mixing until it becomes runny.
- Add the sriracha, honey, spice packet, sauce packet, garlic powder and soy sauce to the bowl. Mix it up ₍₍⚞(˶˃ ꒳ ˂˶)⚟⁾⁾
- When the water starts to boil, add the noodles. Make sure to stir frequently until the noodles are done!!!
- Turn off the heat and add the sauce to the pot. Stir.
- Cut up the chicken into strips and add to the top of the noodles. You should heat the chicken first if it isn’t heated already.
- Add kimchi to the top of the noodles. Drizzle some chili crisp if you’d like.
